One of the great challenges we face is being able to offer alternative vegan options to cured ham. From Tech Transfer Agrifood we look for options that respect as far as possible the organoleptic characteristics in terms of flavor, texture and color of conventional cured hams but that are also free of allergens and ¨clean label¨

Possible approaches

100% natural vegan products without allergens that present organoleptic characteristics in terms of texture, flavor and color similar to their analogues.

Development of analogs using alternative sources of protein of plant origin.

 

Solutions not of interest

We do not seek solutions from animal protein such as insects.
