From Tech Transfer Agrifood we open this challenge in search of solutions that allow to identify frozen meats as PSE in an automatic way.
Normally they are differentiated by colour but it is not always easy to see or detect on all sides of the piece. The piece can be used, but as the meat remains soft, depending on how it is sliced, it may or may not work. It is not proven that it is due to slaughtering, so that is not the prevention solution.
The solution must be able to analyse and detect PSE meats in the production line.
